I’ve spent the morning of this most anxious of days with a chicken.
Not one of ours, I hasten to add.
The medium-sized chicken, I bought in Castres market early Saturday.
I need a distraction today to help get me through.
I’ve been meaning to cook the chicken casserole in Mediterranean Cooking for Diabetics again–and I recently spotted dear Ismail Merchant’s recipe for Chicken Curry in my first book–Delicious Dishes for Diabetics.
A whole chicken is obviously too much for two–although I often roast one whole, because I love the look of a roasted chicken.
So–today, half for the curry and half for the casserole–about 6 or 7 pieces each dish.
We have the curry for lunch, with dal and some steamed broccoli and cauliflower–a comforting plate, while we wait… ’til late.
Dinner’s decided (it’s good to be decisive today): A cauliflower in tomato sauce with a slice or two of sausage from Delicious Dishes, again.
It’s fun to revisit my first cookbook published in 2011–which feels like a century ago–but in truth is only two elections and a Brexit back!
Don’t even go there!
Early evening, and the search is on for the cauliflower in a lockdown-crammed fridge.
Doing my best to stay sane when I can’t find the anchovies either.
Then the calm face of the cauliflower comes into focus, staring straight at me.
“Here I am, dear boy–worry not! All will be well….“
We’ll know better in the morning whether caulis are to be trusted!
So, Robin, In an effort to distract myself as well, I have made your Chickpea and Vegetable soup for lunch and will make Helen’s Zucchini Pasta for dinner…before I start checking the results. My ‘fridge has never been that full, but I keep my anchovies in a cabinet with other tinned fish.
This recipe looks delicious. I’ll try it soon, but with Bell & Evans chicken which is about the best I can get here.
Same here. Avoiding all news coverage until much later. Deleting email alerts from NY Times, Wa Post, TPM. Dinner tonight- comfort food put together with stuff already on hand. Scarey times. Doesn’t help that the last book I read was The Tattooist of Auschwitch.
For some reason (and not because I’m a sadist 😉), I find it terribly comforting to read about your angst on this Election Day here in the US. While I know Meredith is American, it is clear that your feelings go well beyond that to include your caring about the health and well-being of others, to the health and security of our planet, and to a belief in our shared humanity. We’re all hanging by our fingernails as we await the outcome of this most consequential election. Here’s hoping we have reason to pop a bottle of bubbly before the week is out!
I started early; we now have walnut fudge, sweet potato pie, cranberry pumpkin bread, bitter chocolate walnut cookies, many pepper garden clean-up salsa, black bean chilaquiles, chunky avocado salsa, and arugula salad with wild rice, winter squash, pomegranate arils, and goat cheese. None of it goes together and I can’t eat much of it. I’ve been a Type I diabetic since I was a child, so thank heavens I’m an anxiety baker as opposed to eater. My neighbors really look forward to my serious stress episodes….

Thank you Robin I need a distraction today America feels like it’s on a knife edge Imnwatching as if it’s a horror moving lookingnthrough my fingers turning off and on again I had some chicken thighs in my freezer which I took out to defrost late last night without being clear about what to do with them You have inspired me Chicken Curry with Dal Thank You will have to forego the Cauliflour none in But it’s the last day before lockdown here So I am off to the local Supermarket May get one and make your delicious Cauliflour soup Withnthe remainder Cooking for one

Speaking of curry, I made a booboo with the curried green lentils in your new book (p148) last week. I used canned green lentils and mistakenly put too much veg stock in while distracted by my cats who were having a bout of the zoomies, so it was soupy, not like the photo made with dry lentils. So I made basmati rice and served with the curried lentil “soup”. And it was delicious.
Some delicious favourites come out of “mistakes” like that!
