Baskets, trays and bowls almost empty.
Raining.
Oven on the blink.
No wish to budge….

Remember red and yellow peppers that have been in the fridge for some time and cross fingers. Discover that they are well preserved–as is a forgotten small green one. The three juicy-looking tomatoes that need using weigh the perfect pound.
My Ratatouille comes to mind from my new cookbook–a last hurrah for Summer.
It’ll bring a splash of colour and cheer onto the kitchen table on a grey day.
Things are looking up!
Remembered the pumpkin soup that’s been waiting in the fridge, which will make for a light supper with some chèvre and crackers– and the remaining half of the fine bottle of Côte de Rhône, kindly brought over last Sunday by our neighbours.
Starting to enjoy this!

My favorite kind of cooking is clearing out the fridge and pantry. It always picks up my spirits to make something out of what at first glance seems like nothing. The ratatouille looks delicious especially with a the Côte de Rhône. Clears the dreary clouds and perfect for a fall afternoon.

Hi Sarah! Just finished the last spoonful of the soup. Added some stock and it went a bit further. The rhone dried up–not surprising! Love to Robert.

Mmm, looks good. I know the slightly anxious feeling of what to make in this pandemic world. We eat so creatively and so well when we have fresh milk, eggs, & veggies… then resort to canned and prepared foods to extend having to go on another shopping trip! On a different note, the leaves are absolutely beautiful right now, and we’ve discovered so many hiking paths and rail trails to stay active and brighten our days. 🙂 Glad to hear you & Meredith are well!! Hugs & pats for the kitties!

Had something similar in Wales, folk have been panic buying again, Can’t get out, flooding expected tomorrow and Sunday. Currently rationing the bread, as there was none in my order today. Can probably hold out until Monday, but as I’m disabled and somewhat gluten intolerant, I’ll leave the sandwiches to my son! Plenty of cheese, grapes and tomatoes, so I’ll be fine.

I often find more satisfaction in figuring out how to make something tasty from whatever happens to be left in the fridge than in a dish or dishes involving more planning — though for me that’s often a frittata, something not available to you this time without eggs. You obviously rose to the challenge!

Peppers are one of my favourite vegetables. Eat them raw, fried, roasted, stuffed, in stews. Not only do they taste great but look so beautiful too. They come in my favourite colour too, red of my favourite team, LFC. Cheers!
