Je ne vinaigrette rien–type of dressing!

….clearly the heat has got to me.
We are having this today on crisp lettuce that can hold it’s own and not wilt under the strong flavors–with some rocket laced through it.
Salad dressing with anchovies
1 garlic clove–peeled and pulped with a little salt in a mortar
4 anchovy fillets–chopped
2tbsp red wine vinegar
4tbsp olive oil
salt to taste–remembering the anchovies are salty and a turn of the pepper mill
Add the chopped anchovy fillets to the garlic pulp in the mortar and meld them into a loose paste.
Add a little pepper.
Mix in the vinegar then whisk in the oil.
I don’t think my blood pressure could take this one, Robin…..maybe a smattering of anchovie paste and heavier garlic. But the lettuce looks fabulous!
What would it taste like without the anchovies? My husband won’t eat meat, poultry or fish. I am looking for good salad dressings that he can also eat. Thank you.

Hi, Robin. Now, this one is something to crow about. I intend to make it this w/end. Thank you for the photo of Edith Piaf – an almost destitute youngster who became “Le Moineau de Paris.” Regret to advise you that my reply just a few minutes ago was rejected. A lovely vinaigrette. I keep that you can use anchovies for that lovely intensely savoury salty flavour. (Although I sometimes use fish sauce . . . doh!) Anyway a very welcome and timely reminder. Thank you.
