FAST FOOD!
Under two minutes from a whole piece of salmon to a fishcake in the mouth.
Below is the piece I wrote while recovering in a coffee shop, waiting for the wonderful ( i.e. full of wonders) ART INSTITUTE of Chicago to open.
Dawn came up as we headed downtown with the early risers this morning–sister-in-law Mary driving us through the light traffic just a little before her normal hour.
The early morning CBS program had invited me to do a brief cooking piece to be aired as part of their ground-breaking Diabetes Awareness campaign–so great they have taken the lead on this important health issue.
It was anchor Kris Gutierrez’s second day on the job–he recently relocated from Dallas–and it was my first ever on-air demo!
So two debutantes “struttin’ with some barbecue“!
Meredith was holding her breath–she gets nervous on occasions like this.
Kris was a delight and made me feel like I knew what I was doing.
I could get a taste for this…
Robin, you should have your own cooking program on TV. The segment you appeared on in Chicago was wonderful.
I love your cookbook! I don’t have diabetes, but your recipes are wonderful and can be enjoyed by everyone.

I lived in Chicago for 2 years and was a frequent visitor to the Art Institute (free on Mondays back in the day) and always found something new and wondrous on each visit! Did you get a chance to see the Getty Museum out in California?
No time to visit the Getty, Mary Anne–though we had been there before.

You were wonderful! You could certainly carry your own cooking show. If Food Network is smart, they will snap you up pronto. Sure made me want fishcakes again. Yum!

I love seeing you make the recipes, Robin, ‘cuz then I can gauge exactly how much dill to use, how big to make the patty, etc. (Though I must say mine came out pretty well a week ago!) And we used the yogurt sauce on EVERYTHING–it smelled so good whenever we opened the fridge door!

The fishcakes can be whatever size you want of course.
I adore salmon fishcakes and, done your way, they would let the flavour of the fish shine through, unlike potato ones. I can see me doing this dish very soon.

Grew up listening to Satchmo and still miss him . . . and I think I’ll try cooking the fishcakes out on the grill this summer . . . salmon bar-b-q!
